Glutinous rice flour

Shiratama flour made from 100% Japanese glutinous rice. It produces firm and smooth shiratama. One bag makes approximately 40 shiratama. The smaller particles make the preparations softer and silkier.

Tamasan's Shiratama flour has been produced using modern equipment, while remaining faithful to the traditions, respect for know-how, and quality of the Edo era.

As a healthy, tasty, easily digestible food that can be stored for a long time.

Preparation of Shiratama balls

  1. In a bowl, gradually pour water into the Shiratmako flour. Knead well until you get a soft dough like an earlobe.
  2. Make balls about 4cm in diameter. Dip them in boiling water until they rise to the surface.
  3. Let them float for a short while (1 or 2 minutes), then collect them one by one in order. Place them in cold water.
  4. Fish out the meatballs and enjoy once dry.

Example recipe with Shiratama balls

  • Shiratama balls have a simple texture in the mouth, which goes well in a fruit salad, in which you can add agar-agar (Kanten), and red bean seeds (Azuki).
  • With ice cubes and powdered sugar, here is a typical Japanese summer way to enjoy Shiratama balls.
  • In soups or stews, you will fully benefit from its smooth and soft substance.
