

A sake emblematic of Umenishiki's brewing culture, shaped by the rich culinary tradition of the Setouchi region. Its delicate sweetness, never overpowering, offers a soft and warm sensation in the mouth. When you think of Umenishiki, it is this unique taste that comes to mind.
This sake is made from two carefully selected types of rice: kōji rice, a high-quality rice specially adapted for fermentation, and Japanese addition rice (kakemai). The polishing rate is 65% for kōji-mai and 68% for kake-mai, ensuring finesse and purity of flavor.
With an alcohol content of between 15% and 16%, this sake strikes a perfect balance, neither too light nor too strong. Its sweetness index, measured at +2.5 on the Nihonshudo scale, ranks it among the slightly dry sakes, bringing a pleasant freshness to the palate. The moderate acidity (1.0) and low amino acid concentration (0.8) contribute to a smooth and balanced flavor that is easy to enjoy.
