Hana Rakkyo Pickled Shallots
These small Japanese onions (rakkyo) are carefully selected for their small size, fine fiber, and naturally crunchy texture. Each bulb is precisely trimmed (tip and root removed) to obtain a superior quality product, ideal for lovers of traditional Japanese tsukemono.
The rakkyo are then fermented using a traditional lactic acid fermentation process, allowing their natural flavor and firm, crunchy texture to fully develop. They are then marinated in a sweet Japanese vinegar (amazu) for a perfect balance of light acidity, sweetness, and freshness.
Unlike modern industrial methods that suppress fermentation and rely on heavy salting followed by rinsing, this product respects an artisanal method of natural fermentation, ensuring an authentic flavor and better preservation of aromas.
