The shōchū first produced in 1916 (Taishō 5) by Kichisuke Enatsu, founder of the Kirishima distillery, was made from black kōji. Authentic Kuro Kirishima shōchū, which inherits this traditional black kōji fermentation method, is distinguished by its creamy smoothness and clean, crisp finish. Versatile, it goes wonderfully with all types of cuisine – Japanese, Western, Chinese or even spicy – enhancing the flavors of the dishes.
