In the mountainous region of Hida, a historic old town, winter brings heavy snowfalls that completely isolate the region—a veritable land island. In this context, the few pleasures of the season are moments of conviviality around a good meal and a drink with family or friends. In this region, it is traditionally considered rude to drink sake at room temperature. It is in this context that "Yanchasha" was born, a sake typically enjoyed in Hida.

Yanchasha is distinguished by its liveliness and clean finish when enjoyed at room temperature. Slightly dry, it nevertheless allows the richness of the rice to shine through. Once heated, its flavors evolve: the sweetness of the rice intensifies, bringing a mellow and warm note. This sake thus reveals different facets depending on the temperature at which it is enjoyed. The hotter it is served, the more complex its aromas become, revealing depth, sweetness, and umami—all the charm of this beverage.

A slightly dry Japanese sake (nihonshudo +2), made from Hida Homare rice, renowned for its aromatic richness. Its marked acidity (1.3) highlights the depth of its flavors, while a polishing rate of 60% offers a beautiful balance between roundness and structure. With an alcohol content of 15%, this premium sake can be enjoyed both chilled and hot (up to 55°C), revealing different aromas depending on the temperature.
