Buckwheat noodles

Buckwheat noodles made in Banshu (east of Kobe) are a traditional Japanese dish. They can be served hot or cold throughout the year.

For 5 people

Soba noodles are pasta made from a mixture of wheat and buckwheat flour. Very popular in Japan, they can be eaten in two different ways; either hot in a bowl of soup ( kakesoba ) or served cold in a dish (traditionally made of bamboo) that is dipped in a tsuyu sauce ( zarusoba ).

On Omisoka (New Year's Eve), there is a custom of eating these buckwheat noodles, in order to get rid of the difficulties of the year, as they are easily cut when eaten.

Recipe

  1. Boil 1 liter of water and add the noodles. In a separate saucepan, prepare the broth.
  2. Let them boil until they are just tender.
  3. Remove the noodles from the hot water and wash them under cold water.
  4. Then put the cooked noodles in a bowl and then the broth prepared beforehand.
  5. Compose your own toppings (e.g., vegetable tempura). Serve with condiments such as chopped chives and 7-spice mix (shichimi).
